Wake up!! I want to see some posting..some little BLUE numbers.
I've quit visiting all but 2 discussion boards, this one and Chef Talk. Chef Talk can be a little "exclusive" so I'm looking for a place to relax.
I guess there's no demure way to say this...I really enjoyed another board for many years (at least six). But that's changed forever and I'm a sentimental slob so I'd like to find another place to socialize with foodies.
Can't do much food chat right now with 95% of my kitchen packed - but I did manage to throw together a little BBQ for a visiting friend over the weekend. We had beautiful steaks with horseradish sauce; quinoa salad with all kinds of diced aromatics and apple; marinated sun dried tomatoes with olives; and a fruity-shortcakey dessert with vanilla ice cream instead of whipped cream.
So let's make this a well-trafficked kitchen..or a reasonable facsimile.

Cook's Talk is like the "hometown" that's changed so much, you don't go there anymore. CT was my first "regular" cooking discussion board, a place where others were as interested in cooking as I. Participating in CT, digesting the information submitted by pros and avid home cooks alike, was as valuable as any organized lesson. While I'm sure others are still enjoying it, I don't feel the shift in participants is what I'm after in a discussion board. The core group might be there, but the infusion of others whose main topics of conversation veer away from cooking make it hard to participate. Where the overall population of the board used to get jazzed up about cooking, it seems that controversy and politics have taken over. The Prospero environment sucks - I've been through at least 3 format changes with CT through the years and none was a bigger mistake than Prospero.
Now for Quinoa (pronounced KEEN-wah). It's an Aztec super grain. I don't have the stats in front of me, but quinoa packs the highest dose of protein in its tiny little body - more than any other grain measured by itself (not in conjunction with beans). Quinoa needs to be toasted in a pan with a little oil prior to adding the other ingredients and liquid. I like to limit the number of pans I use, so I toast the quinoa, pour it out into a bowl, then proceed with my recipe in the same pan. To this weekend's salad, I added: brunoise of carrot, chopped onion, celery, shallot, red pepper, diced apple and some chix stock. I had to use dried herbs because that's all I have right now. I am trying not to buy too many fresh ingredients because we're moving. You know quinoa is ready when it's "bitey" and the ring around each grain is showing.
I love grain salads because of the vitamins packed into them and because they're a bit more interesting than say, potato salad .

Chiff, it's always good to see you posting. I sure hope this place starts to get a bit more posting being done when people have summered themselves all out.

I have never tried it and am looking for some high protein foods. A lot of grains benefit, taste-wise, from toasting.

...We just get invited over and we do the cooking . Also, friends who don't enjoy cooking as much as we do usually hand over the keys to the kitchen without a fight.
Kai - what other grains do you toast? The only reason I toast quinoa is because when I first bought it, the instructions required toasting. It makes perfect sense that other grains would benefit from toasting because of the resulting, nutty flavor.
I wanted us to try "going veggie" as part of our healthier eating and hopefully LIGHTER lifestyle - but Hubby would have none of it. He needs to chomp down on that flesh every few days and I really didn't relish preparing two meals. Tofu is a swear word for him.
We have been embellishing on our salads. Usually with interesting "main course" food, we have simple greens with home-made vinaigrette. Now we add all kinds of "stuff" to salads, usually sharing them out of the salad bowl with two forks. Last night, having a distinct need for macaroni, I made tomato sauce to which I added diced up grilled chicken and we had rotini. (Another box bites the dust...less to move.)
I feel so tapped of energy and I think it's due to this "holding pattern". God, I can't wait to move.

what's the hold up on the move, Chiffy?? I am out of Massa as of the 29th of July - into the new house in Keyser, WV as of Aug 2.
Whew and Whew - moving is a pain in the patooti, eh? { that's aussie for butt - ;-) }
Too bad about CT - as Big Daddy says - we have missed you. Recipes are starting to float back into the main stream, Ipke sees some political discussion, but - no more erruptus conflagrus on the main board!

I'm happy to say we're definitely in forward motion...it's this small gap of about 2 weeks between now and when we get the moving van that's driving me nuts.
We've bought a house in Port Richey, FL and on a day like today when it feels so hot, we're cooking - we'd love that pool to jump into. All our animals are so lethargic...LOL.
So that's the only holdup...impatience! Closing is scheduled for 7/26 but we won't be there until about 7/28 or 7/29. It's going to take l-o-n-g-e-r with a moving van than just a car - we made it home in 2 days after house hunting.
If anyone has any pet moving tips, I'm all ears. We have 4 cats and 2 dogs. I have a feeling it ain't going to be pretty. (Sigh..)

I've missed so many of my CT friends. The last few times I read the board (after the Prospero move), how can I say this...My hands wound up cold. I found myself getting aggravated by posts rather than having fun or learning.
It used to feel so much more like a "community." This may sound strange but whenever anything of any importance happened to me, I couldn't wait to run to CT and share it with my friends (pitiful, eh...LOL). Even the occasional "sparring" that happened ("no sugar in tomato sauce"/"don't you ever make anything without cream cheese??") was entertaining and not mean spirited.
There was a poster from way back, named Carolina. Eventually she disappeared and I found myself wondering, "How could she quit cold turkey like that??" I felt like she was walking away from a bunch of cousins. After things settle down and we're in FL, employed, and I'm sauteeing up a bunch of something, I know I'll get the urge to visit again (to re-survey the mood). Until then, I appreciate the sentiment, BD...You always ruled.

Chiff, I've toasted rice forevah--that's the main one. But also oatmeal, a long time ago. Also, plenty of seeds, but esp pumpkin, which pop like popcorn (ok, that's not toasting, because there's oil) and look like cockroaches when they've popped. Toss w/a bit of salt, cayenne or your fave chile powder, etc. They're called pepitas here. (I buy them raw, green, out of their main shell.)
The other main thing I toast is dandelion root, for tea. (Toasted rice is also a good tea.)

I think Carolina has/had some health probs that might also have contributed to her lack of participation. Jean may still have her addy.
Agree re the new tone w/new format. I can never find a post if I want to respond later. Guess this is the new world age of making friends fast, and losing them fast.
As for new folks changing the tone, I'm sure MC would agree I was a problem, due to my continual questions :-(

ooohhh - I am flying 1 of my dogs and the 2 cats in - just has to go that way - I can't fathom the trip will all 4 animals in the car! YOU have an even worse scenario - yikes!
You're closing is the same as mine is here, our closing on the new property is Aug 2nd. When you get into FLA and have your phone number, e-mail it to me - we can commiserate as we unpack! ;-)
I'll e-mail my cell number to you - I won't be hooking up the phone until Aug 5th, just to make sure the movers make it in on the 2nd.
Are you going to be near Adele?? I have to look up Port Richey on the map. My sister is working in FLA until the end of Oct - and I'll be down in Sept around the 16th. Want to get together then??
